A very veggie day....

I hate when I have a plethora of veggies and feel overwhelmed of what to do with all of them.  I guess there are worse problems to have though.  ;-)

I tried to make the best use though of what I had..... 

LUNCH
a throw it all together salad
-lettuce, tomato, leftover soycutash, walnuts, feta and some TJ's balsamic vinagrette

It was delish!  Definitely need to get more of that soycutash from TJ's. 
Lunch time also involved a walk with Reggie.  Then it was back to work. At work I had a camera shy Kashi granola bar for a snack, plus lots of green tea.  

After work I hit the gym, I hate the treadmill but its so hard for me to gauge my pace.  Someday I'll get a Garmin.  
Tonight's Workout
- 1 mile warm up, 8:30 pace
-4.5 miles, 7:20 pace
-1 mile cool down, 8:30 pace for 1/2 mile and then 9 

My foot was bothering me a bit during the last part of my tempo pace, so I cut it back by a half mile.  Luckily I have an appointment with the podiatrist tomorrow.  Although I am worried she is going to recommend rest..... as I have a 20 miler planned this weekend.  Doesn't really jive. 

After the gym, Reggie and I went for a walk and then I threw together a stir-fry for dinner. 
-multigrain tempeh, turnips, collard greens, baby bok choy, garlic, olive oil and a little soy sauce


Another delicious meal.  I've come to the conclusion pretty much any leafy green tastes great sauteed with garlic and olive oil. 

So as I said earlier I finally have a podiatrist appointment.  I think I have plantars fasciitis in both my feet, especially my right foot, and I think something is up with both my big toes.  When I ran the Boston Marathon in April this year, (squimish people might not like this.... warning!!) 

I got blood blisters under both my toenails, so that raised the toenail up and ultimately I lost them both.  The issue now is that my nails have grown back in a little funny, so I want them to get checked out. 

So my suggestion for your marathon shoes.... go up a full size, not just a half a size.  At least for me that is what I need to do.  My feet just swell too much!  

Now a question on the subject of food again.... I want to try and make more vegetarian dinners.  What is your favorite vegetarian dinner? or you top 3 if you cannot decide....

And..... I'm back......

Sorry about that.  

I'm a bad blogger when my life gets crazy. 

I'm back from a fabulous racing weekend!  Reach the Beach went awesome.  I'll do a separate post shortly. 

Today was about trying to get back to my routine.....

It kinda worked. 

6am I did Kettlebell!

This mornings workout was a good one for a Monda, I think. 
1 minute of each exercise (30 seconds each side when applicable), 1 minute rest at the end
Swings, rest

Then it was home for some breakfast!

BREAKFAST
Green Monster- spinach, ice, milk, almond butter, little greek yogurt, frozen mango and banana

Then off to work I went!

I headed home to make a quick lunch at noon time. 
 
LUNCH
-spinach flat out, turkey, homemade pesto, tomatoes, lettuce and roasted some strange vegetable from our CSA (didn't go so I yanked them out)
Left over roasted potatoes. 

After work I grabbed our crop share veggies for the week.  I was bad and didn't take a picture.  Yummiest watermelon ever though!!!

After getting our veggies & watermelon I had to venture downtown to prep the planters for tomorrow.  I have a crew of volunteers coming down after work to help me plant mums, cabbage & kale for the fall.  I had to remove all the summer plantings, which took me longer than I had hoped but I got it done!

I finally got home to make dinner around 8pm. 

DINNER
Pesto Turkey Burgers - just mixed in some homemade pesto with the ground turkey
Sauteed Turnips w/ olive oil & garlic

Yum!

Now to work on road race planning details.  I'm very glad Reach the Beach is done, now I can totally focus on the 5K I'm coordinating.... I'm getting a bit nervous, being a newbie at this race directing thing and all... I'm worried I'm going to forget something!

But first I'll do a race recap post!

No weeding and no wine... for now....

We had some good thunderstorms coming moving through tonight and actually this morning too.  It put a glitch in my plans to Weed & Wine.... bummer.  Its a group of volunteers I organize to weed a few sites downtown for a non-profit that takes care of some municipal plantings.  By adding in the wine aspect I got more interest, imagine that!  But no weeding tonight, eventually I may wine. 


Today was a bit hectic at work, seems as I'm finally making progress on a couple projects an emergency crops up..... so then I get distracted and caught up in that.  Ugh. 

So to keep me pushing through my morning, I had an iced coffee & a plum, yum. 


At lunch I was determined to get my 5 mile run in, the skies looked a bit gloomy so I opted for the gym.... the dreaded treadmill.  Actually it worked out well in some ways as at mile 3 I had to scoot to the bathroom, damn dairy at breakfast.  So after a pit stop it was back on the mill to finish the last 2 miles.  

I ran about an 8 minute pace, although I did go faster for awhile to get the overall time down to equal 8 min/mile pace....since my warm up was at that pace.  Yes, it annoys me to be have that stupid computer making me look slower, so I run faster than an 8 pace to have my overall time equal an 8 minute pace.  Call me crazy, but in the end it gets me to push my pace.  

I stretched a bit, took a quick shower and then quickly got back to work.... where I dined at my desk again. 

-spinach flat out, 1 slice turkey, 1 slice provolone, sprouts, peppers, tomato, Wickles and lil mayo
-side of extra chopped green peppers (no they aren't hot ones, they are just pale peppers from our CSA)


I had to get another fruity snack in, a deliciously juicy nectarine, love them!!!!

Apparently I had the munchies today, when I got home from work I had to have some cantaloupe!  So good right now!

I had hoped the storm would pass so that I could still go weeding, but unfortunately it did not.  So I ventured back out to pick up the pooch, Reggie, from the grand dog parents..... my in-laws help us out and dog sit a few times a week.   They are so good to us!

Then it was home to finally make dinner.  Unfortunately the hubby was home for just a short bit before heading out to a night time meeting :(   Hopefully it doesn't go too long.  Between our two busy schedules we are lucky if we see each other for an hour a day at times, thus why I LOVE the weekends cause then we get to hang out more!

DINNER
Since it was raining I opted not to grill, which is how I usually cook baby turnips.  
Instead I sauteed them with olive oil & a little garlic.


I guess I just love turnips as these came out so good and juicy, grilled or sauteed, they rock!

The turnips joined some baked haddock & corn on the cob

I dipped the haddock in milk, rolled it in panko crumbs, sprinkled on some Blue Crab Bay Co. Herbs for Seafood, lemon juice and some olive oil.  Baked in a 500 degree pre-heated over for 15 minutes, probably could have gone a minute or two less. 



Yum good dinner.  Well hubby still isn't home, but my wonderful father-in-law just called to offer to help me drop my car off at the garage!

Feel the Heat.....

No no... I'm not complaining.... just feelin' it and appreciating it as winter will soon be here.

So yesterday was a balmy one. A smart person would have gotten up early for the day's run, before it got too hot.... but instead I opted to sleep in till 6:30. :)

But then genius struck as I realized I had to drop my car off for some work in a town on the coast..... the perfect place to be on a hot day.... by the ocean! Before that though, I had to get through the work day and that called for a yummy breakfast of my favorites.

-Kashi Heart to Heart Oats, greek yogurt, strawberries, blueberries, ground flax and a little almond butter. Yes I am addicted!


Then it was off to work for the day. By mid-morning I needed a little snack and I had brought this enormous but delicious nectarine. I prefer nectarines over peaches..... no fuzz. I think in 6th grade I even wrote a poem about nectarines & summer.
At lunch time I headed home to eat as I didn't get a chance to pack my lunch, plus I just love having that luxury.... being able to go home for a bit. However, my lunch was not all that spectacular. I was feeling the need for something other than turkey so I pulled out these frozen salmon burgers. Blech. I ate it, but the salmon burger was just not right....... the flavor was a bit off or something.

-flat out, salmon burger, spinach, tomato, baby bell light cheese and a little mayo
- side of fresh from the famer's market green beans, raw .... these saved the meal! so crunch and delicious!!!



Then it was back to work, I plugged on through the day, snacked on banana and later a Peanut Butter Cookie Lara Bar. Lots of water too as I had to get ready for my post work run!


Before leaving work my mom called, being the Facebook stalker that she is.... she noted my update about doing a run by the ocean after work, she was up for a run too so she joined me. Worked out well too as I was able to drop off my car at the repair shop and then have a ride to go run and to get home. :)
We had an absolutely BEAUTIFUL 6 mile run! . I really need to do the loop we did more often, it does seem silly to drive to go run, but when you have a route this gorgeous that is all the reason you need! There was also a fabulous breeze coming off the ocean as well. Oh and I should add part of our run went through the park where my husband and I were married, so its always nice to pay a visit there. Its a fabulous park overlooking the ocean and the river, you can see several lighthouses from the park.
The only distressing thing about the run was my stupid running shorts. I'm a bit behind on laundry so I didn't have much to choose from, so I snagged a pair of side-split running shorts I had been given..... NOT GOOD.... especially when its windy out! First problem is the shorts are a bit big.... so the underwear part of them rides up, but then the shorts part almost has too much fabric to ride up. The wind was opening up the side split quite a bit and then I had the underwear part riding up.... all which led to me at least feeling like I was mooning everyone that drove by! Oh well.... note to self, get rid of those shorts!!!!

Once I was home and showered it was time for dinner. I was ravenous!!! I really should have brought a snack with me for right after the run. So while I cooked dinner I ate a little Baby Bell Light cheese round.
I had lots of fabulous veggies to choose from since I just picked up our crop share last night, I opted for one my favorites baby turnips! These little suckers are so amazing on the grill, just a bit of olive oil, salt and pepper. They come out so juicy and delicious. The other great thing is you can sautee up the greens, which I did with some olive oil and garlic. So two sides from one amazing little veggie!!

So my turnips and turnip greens were joined by a turkey burger with some sauteed onions (crop share), tomato and a little plain greek yogurt on a whole wheat bun. Not too shabby. I added a little Montreal Chicken seasoning to the ground turkey, I think its made by McCormick or something like that.


The burger I had was a bit small, so I grabbed a bit of another one too minus the bun & fixings. Felt like I needed a bit more protein.

I was getting caught up on shows I Tivo'd over vacation last night, so I stayed up a bit later than I probably should have.... and of course I eventually felt the need for a little dessert. I wanted to keep it somewhat light so I went for a frozen fruit bar. It was a Caribbean Fruit Flow from Trader Joe's. Lots of yummy frozen fruit, it was a perfect way to end a hot day!

Who's a slacker....... oh me.

Hey I knew it was ambitious to think I could wade into the world of blogging while on vacation...... it just crashed and burned a couple days in. The internet connection wasn't working on all the computers we had.... oh yeah and I don't have my own computer at the moment... take pity. But I think I have sufficiently guilted my hubby and I'll have myself a nice little macbook all of my own. :)

Pretty much once Kirt arrived my ability to blog went downhill... he's such a distraction. ;) As were my many books I got sucked into, I'm a sucker for a mindless mystery novel.

Anyhow.... for the most part my breakfasts & lunches didn't get too wild and crazy. However my evil, but so sweet, father-in-law kept getting fresh donuts from a place nearby...... so hard to resist! I tried to limit myself to half of one and then keep to a healthy breakfast.

One major accomplishment for my trip, I worked out 6 out of 8 days! Even on those other 2 days I did some walking or leisurely biking (to the beach!).

My workouts....
Wednesday: 3 mile run, 30 pushups, planks 3 x's holding for 1 minute
Thursday: 4 mile run, situps, 30 push ups
Friday: off day, but walked and road my bike to the beach
Saturday: 20 mile bike ride
Sunday: 25 mile bike ride
Monday: off day, but did some walking and scaling the dunes at the beach
Tuesday: 8 mile run
Wednesday: 3 mile run

When on vacation I MUST workout first thing in the morning or else it doesn't happen.... which has been a trend in my life even when I'm not on vacation. The day flies by and if I didn't work out in the morning, its not going to happen on most days.

So here is some photos and some yapping.....
Breakfast most days was Kashi Heart to Heart, greek yogurt, berries, drizzle of almond butter and some ground flax.... why mess with perfection.



Lunch tended to be a flat out wrap, turkey, provolone, lots of veggies, pickles and some hummus. Side of carrots and occasionally a little vino.

Dinner was where it got a bit more interesting.....
Thursday night... grilled pork, asparagus, spring turnips and sauteed turnip greens with some brown rice. Little salad on the side.
Friday we decided to hit up a fish market in Wellfleet, Hatch's. I found some super yummy smoked bluefish. This stuff is addicting! Our pre-dinner appetizer spread. I probably would have been content with just this to be honest... but one cannot live on cheese and smoked bluefish alone.... so sad.
I was on dinner duty so I did a simple baked cod, mashed fennel potatoes (all from our crop share), zucchini & tomato salad, as well as some regular salad. Also had a glass of Charles Shaw cabernet... aka 2 Buck Chuck. Its really not bad, especially when you consider the price, actually $2.99 where I got it in Cambridge, Ma.
Oh and I had the hubby make these as another treat for dinner.... some fresh mussels cooked in olive oil & white wine with some onion and garlic. YUMMY!!!

We had some left overs so this was Saturday's breakfast... don't worry I had some fruit too...

Saturday's dinner was a lemon chicken pasta my mother-in-law whipped up. Had salad on the side. Simple but so good! (love how beautifully lit my dinner is, thank you sun)




Then we ventured to the upper deck to enjoy this....

Sunday was a BEACH DAY!!!

It was a tad Windy on Sunday but we survived and had a great time, so much so that we went back for more on Monday. But this time we went earlier and packed our lunch. Both days we ventured up to a great beach bar/restaurant around 5 or 6pm, the Beachcomber. Sunday we just did a couple beers and Monday we shared a 1/2 dozen oysters on the half shell and a half dozen shrimp cocktail, so yummy, plus a couple drinks.

Sunday we headed out for dinner, our first selection didn't really work out well.... long story, a hungry Britt can be a bit grumpy when a restaurant's staff is rude.... so we went back to a place we know and love.... Winslow's Tavern in Wellfleet.

Kirt and I split a 1/2 dozen oysters and then I had this delicious striped bass w/ potatoes and artichokes so good.



Random other stuff...
Me hanging with Zoey..... the neighborhood Portuguese Water Dog..... she has the most hysterical bark, you can tell when she is out and about.

Left out a few side trips and adventures.... but that is the best I can do at this late hour. Hopefully now that I'm back to the "real world" I'll get on more of a regular blog schedule.... we shall see! Now to get some sleep, I am hoping to get back to Kettlebell tomorrow morning!
